So, the Northies and the Southies found something for
themselves. And for those, who are neither (!!), I have something for you too.
Yes, it would seem I have something for everyone! (Heh, heh)
So, here goes another…
Muffins
Ingredients:
Flour – 1 ½ cups
Powdered sugar – 1 cup
Unsalted Butter – 1
cup
Eggs – 2
Baking Powder – 1 tsp
Vanilla Essence – 1
tsp
Butter Paper – ½ sheet
Note: All ingredients
must be at room temperature
The eggs must be freshly
purchased to be on the safe side
The bowls should be
devoid of any moisture
Method:
Grease the Muffin tray. Line it with butter paper and keep
it aside.
Sift the flour with the baking powder and keep aside.
Put the butter in a bowl and add the powdered sugar and mix
well. Keep beating till the mixture has the texture of ice cream.
Separate the yolks from the whites. Mix the essence into them and beat both
separately and vigorously.
Beat the whites till they are stiff.
Mix the yolk with the batter, mixing constantly and
vigorously.
In the meanwhile, preheat the oven at 120 degrees for ten
minutes.
Lightly fold in the flour into the batter.
Then, pour in the stiff egg whites and fold in the mixture
lightly.
Pour into the tray and bake for 20 minutes …
…and watch your teen drool with happiness.
