What’s Cooking? – Part 2

So, here’s a simple recipe for a lazy cook to keep you busy in the festive season.


Gajar Ka Halwa

Serves four people
Time taken: 45 minutes

Ingredients:

Red succulent Carrots – 5 medium sized
Milk – 1 liter
Sugar – 5-6 teaspoons, if you are weight conscious
Cardamom powder – a tsp
Ghee – 2 teaspoons, if you are a diet freak
Nuts (cashew, almonds and pista soaked in warm water) – 1 cup

Method:

Wash, shave and grate the carrots and keep it aside.

De-skin the almonds and pista soaked in warm water. Cut into thin slices and keep aside.

Take a kadai and pour two teaspoons of ghee. Allow it to melt and then add the shredded carrots.

 Sauté for a couple of minutes before pouring in the milk. 

Let it simmer till the milk dries up. 

When completely dry of milk, add sugar. It will become moist again. Allow it to completely dry stirring constantly.

When it is completely dry, remove it from the fire and add the cardamom powder and pour it onto a dish. 

Garnish liberally with thinly sliced nuts and serve.
